Beef Barley Mushroom Soup

Serves 8.0   •   8 oz


8 oz beef sirloin, diced
1 Tbsp extra virgin olive oil
1/2 cup carrots, chopped
1/3 cup onion, chopped
½  lb mushrooms, sliced
2 stalks celery, chopped
1-2 clove garlic, minced
6 cups low sodium beef broth
1 cup barley

Recipe Directions

Brown Beef cubes in olive oil until cooked.  Remove to bowl.  Add vegetables and sauté until crispy. Add cooked beef and beef broth.  Bring to boil.  Add barley.  Cook until barley is done about 20-30 minutes.
