Berry Balsamic Chicken

Serves 4 - 1 chicken breast and 2 tbsp sauce

Ingredients

  • 1 tsp extra virgin olive oil
  • Cooking Spray
  • 1/2 cup red onion, chopped
  • 1 1/2 tsp minced fresh or 1/2 tsp dried thyme
  • 4 (4 oz) boneless, skinless chicken breasts
  • 2 Tbsp Balsamic Vinegar
  • 1/4 tsp black pepper
  • 1/3 - 1/2 seedless raspberry preserves

Directions

  1. Spray large nonstick skillet with cooking spray.
  2. Heat oil in pan over medium-high heat until hot.
  3. Add onion; saute 5 minutes.
  4. Combine thyme and 1/4 tsp salt (optional); sprinkle over chicken.
  5. Add chicken to skillet; saute 6 minutes on each side or until done.
  6. Remove chicken from skillet; keep warm.
  7. Reduce heat to medium-low.
  8. Add preserves, vinegar, and pepper. Stirring constantly until the preserves melt.
  9. Spoon raspberry glaze over chicken.
