Black Bean Salsa

Ingredients

  • 1 (8oz) can black beans, drained and rinsed
  • 8 oz frozen corn, thawed and drained
  • 1 fresh tomato, chopped
  • ¾ cup chopped onion
  • ½ cup chopped green bell pepper
  • 3 tbsp low sodium vegetable broth
  • 3 tbsp minced fresh cilantro
  • 3 tbsp lime juice
  • 2 cloves garlic, minced
  • 11/2 tsp ground cumin.

Directions

Combine ingredients and mix well.   Serve with tortilla chips or as a side dish.
