Black Bean Salsa
Ingredients
- 1 (8oz) can black beans, drained and rinsed
- 8 oz frozen corn, thawed and drained
- 1 fresh tomato, chopped
- ¾ cup chopped onion
- ½ cup chopped green bell pepper
- 3 tbsp low sodium vegetable broth
- 3 tbsp minced fresh cilantro
- 3 tbsp lime juice
- 2 cloves garlic, minced
- 11/2 tsp ground cumin.
Directions
Combine ingredients and mix well. Serve with tortilla chips or as a side dish.
