Carrot Bars

Servings: 18 - 1/18 of Recipe

Ingredients

  • 3 cups raw carrots, grated
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1/4 cup Sugar Twin
  • 1/4 cup canola oil
  • 1/4 cup applesauce
  • 1/2 cup pineapple crushed, drained
  • 1 tsp vanilla
  • 2 Omega eggs
  • 1/2 cup whole wheat flour
  • 3/4 cup white flour
  • 1/2 cup Flaxseed Meal
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 2 tsp cinnamon
  • 1/2 cup walnuts, chopped
  • 1/2 cup raisin, seedless

Directions

  1. Combine the carrots, the sugar, Sugar Twin, raisins, canola oil, applesauce, pineapple, vanilla, and eggs in a large bowl. Mix until blended
  2. Stir the rest of the ingredients together and add slowly to the wet ingredients.  Blend well.
  3. Stir in the chopped walnuts.
  4. Pour into a 9x13 pan.  Bake in 350 degree oven for about 40-45 minutes or until a tooth pick comes out mostly clean.  DO NOT OVERBAKE.
  5. Frost if desired with cream cheese frosting.
  6. Nuts can be omitted from the cake and use in or on top of the frosting.
