Carrot Bars

Ingredients
- 3 cups raw carrots, grated
- 1/2 cup brown sugar
- 1/2 cup sugar
- 1/4 cup Sugar Twin
- 1/4 cup canola oil
- 1/4 cup applesauce
- 1/2 cup pineapple crushed, drained
- 1 tsp vanilla
- 2 Omega eggs
- 1/2 cup whole wheat flour
- 3/4 cup white flour
- 1/2 cup Flaxseed Meal
- 3/4 tsp baking soda
- 1/4 tsp salt
- 2 tsp cinnamon
- 1/2 cup walnuts, chopped
- 1/2 cup raisin, seedless
Directions
- Combine the carrots, the sugar, Sugar Twin, raisins, canola oil, applesauce, pineapple, vanilla, and eggs in a large bowl. Mix until blended
- Stir the rest of the ingredients together and add slowly to the wet ingredients. Blend well.
- Stir in the chopped walnuts.
- Pour into a 9x13 pan. Bake in 350 degree oven for about 40-45 minutes or until a tooth pick comes out mostly clean. DO NOT OVERBAKE.
- Frost if desired with cream cheese frosting.
- Nuts can be omitted from the cake and use in or on top of the frosting.
