Chicken and Vegetable Pita Pizzas

Recipe for Pita Pizza

1 Pocket Pita Bread
1/4 cup Part Skim Mozzarella Cheese
1/4 cup Pizza Sauce (bottled or make your own from recipe below)
2 large Black Olives sliced
1 ounce cooked boneless, skinless Chicken Breast
2 tbs diced Green Peppers
1 tbs diced Onions (double quantity for green onions)
4 slices of fresh Mushrooms
1 Tbsp Fresh parmesan cheese, shredded

Mist pan with cooking spray and cook chicken breast pieces until no longer pink. Set aside. Slice and dice up all vegetables and portion them for each pizza. Assemble pizzas with all ingredients. Separate pizzas with parchment paper and wrap in plastic. Freeze pizzas in stacks of 2 (so toppings don't come off).  Bake at 350 until cheese is bubbly(about 10-15 minutes)

Tomato Sauce for Pizzas

1/2 (6 ounce) can tomato paste
3/4 cup water
2 tablespoons and 2 teaspoons extra virgin olive oil
1 clove garlic, minced
salt to taste
ground black pepper to taste
3/4 teaspoon dried oregano
3/4 teaspoon dried basil
1/4 teaspoon dried rosemary, crushed

Red peppers
