Flax Jax
Serves 4 • 2-4 inch pancakes
Ingredients
1 cup whole wheat flour
1/4 cup flaxseed meal
1/2 tsp baking soda
2 tsp baking powder
1/2 tsp salt
1 Tbsp sugar
1 Omega egg
1 cup buttermilk
1 Tbsp canola oil
Recipe Directions
- Combine dry ingredients in a bowl.
- In a seperate bowl, mix egg, milk and canola oil with wire whip
- Add dry ingredients to milk mixture. Gently stir until moistened. DO NOT OVER MIX. Batter will be lumpy.
- Spray a griddle or pan with non-stick spray. Cook pancakes on hot griddle.
Topping Suggestions
- Sliced strawberries topped with low-fat yogurt.
- Hot cinnamon applesauce
- Peaches canned in natural juices topped with plain low-fat yogurt
