Flax Jax

Serves 4   •   2-4 inch pancakes


1 cup whole wheat flour
1/4 cup flaxseed meal
1/2 tsp baking soda
2 tsp baking powder
1/2 tsp salt
1 Tbsp sugar
1 Omega egg
1 cup buttermilk
1 Tbsp canola oil

Recipe Directions

  1. Combine dry ingredients in a bowl.
  2. In a seperate bowl, mix egg, milk and canola oil with wire whip
  3. Add dry ingredients to milk mixture.  Gently stir until moistened.  DO NOT OVER MIX.  Batter will be lumpy.
  4. Spray a griddle or pan with non-stick spray.  Cook pancakes on hot griddle.

Topping Suggestions

  • Sliced strawberries topped with low-fat yogurt.
  • Hot cinnamon applesauce
  • Peaches canned in natural juices topped with plain low-fat yogurt
