Ginger Beef Stir-Fry

Serves 6

2 Tbsp extra virgin olive oil
2 cloves garlic, minced
2 Tbsp minced ginger root
1 bunch green onions, chopped
2 lbs Sirloin Steak, cut in thin strips
1/2 lb broccoli #owerettes
1 cup snap peas, fresh or frozen
1 small onion, sliced
1 medium red pepper, sliced
2 medium carrots, cut into strips
1 cup beef broth, low sodium
1/4 cup soy sauce, low sodium
1 Tbsp cornstarch
3 cups cooked long grain brown rice

Heat oil in skillet or wok.When hot, quickly stir fry garlic,ginger and onions until onions are translucent - about 2-3 minutes. Add beef and stir fry until cooked. Add vegetables and stir fry until tender crisp.Warm the broth, soy sauce and cornstarch in saucepan or microwave. Add to skillet. Cook until thickened. Turn heat down to holding temperatures. Be careful not to overcook. Serve over brown rice.
