Low-fat Alfredo Sauce

This low fat alfredo sauce has ½ the fat and sodium of store bought versions.

Servings:  Makes 2 cups


  • ¼ C butter
  • ¼ C flour
  • ¼ tsp pepper
  • 1 C skim milk
  • 1 C chicken broth, low sodium
  • ½ C shredded parmesan cheese
  • ½ c shredded mozzarella cheese
  • Italian seasonings to taste (optional)


Melt butter in large sauce pan. Over medium heat, stir in the flour, salt and pepper, stirring continually. Cook about 1 minute. When flour and butter are adequately mixed, add the chicken broth. Maintaining a low boil, slowly add the milk, stirring continually with a whisk. When the mixture is thick and bubbly, stir in the cheeses until melted and then season to taste.

Although this recipe can be made carefully in a microwave, it generally turns out better using the stove top.
