Oven Roasted Vegetables
Serves: 8 - 1/2 cup
Ingredients
2 medium zucchini
1 medium onion, sliced
1 large red pepper
1 large green pepper
2 tbsp extra virgin olive oil
1/2 tsp basil
1 tsp dillweed
1/2 tsp pepper
Directions
- Cube red pepper, green pepper. and zucchini.
- Place vegetables in large bowl and toss with olive oil.
- Arrange on cookie sheet. Sprinkle with seasonings.
- Bake at 350 for 15 minutes. Stir. Return to oven and bake for another 15 minutes or until tender crisp.
