Quinoa Pilaf

Servings: 4

Ingredients

  • 1 tbsp extra virgin olive oil
  • 1/2 medium onion, chopped
  • 1 stalk celery, chopped
  • 2 carrots, diced
  • 1/2 cup quinoa, rinsed with cold water and drained
  • 1 cup hot chicken or vegetable broth
  • 1 bay leaf
  • 1 tbsp lemon zest
  • 1 tbsp lemon juice
  • 1/2 cup frozen peas, thawed
  • ground black pepper to taste

Directions

  1. Saute vegetables in olive oil until tender.
  2. Add quinoa, cook and stir for one minute.
  3. Add broth, bay leaf, lemon zest, and lemon juice. Bring to a boil.
  4. Cover and reduce heat. Simmer for 15 to 20 minutes until liquid is absorbed and quinoa is tender.
  5. Discard bay leaf. Stir in peas and season to taste.
