Sauteed Mushrooms

Mushrooms are a low calorie, low carb food that is packed with heart-health nutrition.  New research shows that the common white button mushroom has many of the same nutritional benefits of the more exotic medicinal mushrooms such as maitake, shitake and reishi.  The beta-glucans in mushrooms decrease cholesterol and inflammation. Their high mineral and antioxidant content protects the heart and blood vessels.  

Servings: 6


2 Tbsp extra-virgin olive oil
1 cup sliced white onion
2 cloves garlic, chopped
1-2 cup sliced button mushrooms
1-2 cup sliced Portobello mushrooms
½ tsp dried thyme
¼ tsp salt
Fresh ground black pepper


Heat oil in a large skillet on high heat.  Add the onion and garlic and cook until onions are translucent.  Add the mushrooms and sauté until cooked.  Add thyme, fresh ground black pepper and a light sprinkle of salt.
