Stuffed Chicken Breasts

Ingredients

  • 4 (4-ounce) chicken breasts, boneless, skinless
  • 3/4 cup part-skim shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped dry-roasted peanuts
  • black pepper
  • paprika

Directions

  1. Preheat oven to 350 degrees. Using sharp knife make a pocket in each breast by cutting from side to side, leaving edges intact.
  2. In a bowl combine cheeses and peanuts.
  3. Spoon filling into pockets, packing lightly. Place chicken in baking dish. Lightly sprinkle with pepper and paprika.
  4. Bake, uncovered, for 50 to 55 minutes or until chicken reaches temperature of 165°.
