Turkey Chili

Serves 8

Ingredients

  • 1 Tbsp extra virgin olive oil
  • 1 cup onion, chopped
  • 1/2 cup celery, diced
  • 1/2 cup red pepper, chopped
  • 1 clove garlic, minced
  • 2 cups turkey, diced
  • 2 cups white beans, canned, drained
  • ½ c corn
  • 1 cup skim milk
  • 2 ½ cups chicken base, low sodium
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp black pepper
  • 1 Tbsp jalapeno, diced
  • ¼ cup parsely, chopped

Recipe Directions

  1. Saute onions, celery, red pepper and garlic in olive oil until tender.  Add turkey, beans, corn, chicken stock and milk.  Then add spices and jalapenos.  Stir until well blended.
  2. Remove ½ mixture and puree in blender or food processor.  Add back to pan.
  3. Heat on medium temperature for 15-20 minutes or until heated through.  Portion into bowls. Top with chopped parsley.
