Oven Roasted Red Potatoes
These potatoes roast at the same temperature as the tenderloin roast. You may include the herbs listed in the ingredient list or experiment with your own herb combination.

Ingredients
1/8 cup olive oil
1 tablespoon minced garlic
½ teaspoon dried basil
½ teaspoon dried dill weed
½ teaspoon dried thyme
½ teaspoon dried oregano
1 tablespoon dried parsley flakes
½ teaspoon paprika
½ teaspoon crushed red pepper flakes
1 lb baby red potatoes, quartered
Directions
1. Preheat oven to 400 degrees. In a large bowl, combine the oil and herbs. Add potatoes and stir until evenly coated.
2. Place in a single layer on a baking sheet. Roast for about 30 minutes at 400 degrees. Stir at 15 minutes to ensure all sides are browned.
