Beef Barley Mushroom Soup

Beef Barley Mushroom Soup

Makes eight servings


  • 8 ounces diced beef sirloin
  • 1 tablespoons extra virgin olive oil
  • ½ cup chopped carrots
  • ⅓ cup chopped onions
  • ½ pound sliced mushrooms
  • 2 stalks chopped celery
  • 1-2 cloves minced garlic
  • 6 cups beef broth
  • 1 cup uncooked barley


  1. Brown beef cubes in olive oil in a large sauté pan until cooked. Remove to bowl.
  2. Add vegetables to pan and sauté briefly, and then return cooked beef to pan. Add beef broth and bring to boil. Add barley.
  3. Cook until barley is done, about 20-30 minutes.
