This simple, garden-fresh Caprese Salad combines grape tomatoes, fresh mozzarella and basil leaves for a light and nutritious dish. Tossed with extra virgin olive oil and balsamic vinegar, it's full of flavor. This salad makes a great side dish or light meal any time of year.
Caprese Salad with Grape Tomatoes
Ingredients
- 3 cups grape or cherry tomatoes, halved
- 1 cup fresh mozzarella, cut into ¼ inch cubes
- 2 tablespoons extra virgin olive oil
- 2 teaspoons balsamic vinegar
- 5-7 fresh basil leaves
- Freshly ground black pepper to taste
Directions
- Toss together the tomatoes, mozzarella, olive oil and balsamic vinegar.
- Tear the basil into large pieces and toss into the salad. Add pepper to taste.
- Serve immediately.
