Recipe: Caprese Salad with Grape Tomatoes

This simple, garden-fresh Caprese Salad combines grape tomatoes, fresh mozzarella and basil leaves for a light and nutritious dish. Tossed with extra virgin olive oil and balsamic vinegar, it's full of flavor. This salad makes a great side dish or light meal any time of year.

Caprese Salad with Grape Tomatoes

Ingredients

  • 3 cups grape or cherry tomatoes, halved
  • 1 cup fresh mozzarella, cut into ¼ inch cubes
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons balsamic vinegar
  • 5-7 fresh basil leaves
  • Freshly ground black pepper to taste

Directions

  1. Toss together the tomatoes, mozzarella, olive oil and balsamic vinegar.
  2. Tear the basil into large pieces and toss into the salad. Add pepper to taste.
  3. Serve immediately.
