Recipe: Blueberry Clusters

Nutrition experts at Avera Heart Hospital developed this recipe especially for the holiday season, and it combines nutrition and taste in a good-for-you way. Blueberries and dark chocolate contain antioxidants which may reduce the risk of many diseases (including heart disease and certain cancers).

Blueberry Clusters

Makes 32 servings

Ingredients

  • 1 cup dark chocolate chips
  • 2 cups fresh blueberries
  • ¼ cup pecans, chopped

Directions

  1. Line a baking sheet with parchment paper.
  2. Heat chocolate chips in microwave-safe bowl on full power for 30 seconds. Stir and then repeat until smooth.
  3. Stir blueberries into the melted chocolate.
  4. Using a tablespoon, scoop clumps onto the parchment lined baking sheet.
  5. Sprinkle each cluster with the pecans.
  6. Refrigerate for 30 minutes or until firm.

Nutrition per serving: 51 calories, 3 grams fat; 5 grams carbohydrate; less than 1 gram protein
