Recipe: Caribbean Jerk Chicken Breasts

As the days grow longer and the warmer weather gets us outdoors, it’s the perfect time to fire up the grill. The marinade adds a sweet, savory and spicy flavor to chicken that pairs perfectly with a side of brown rice.

Whether you're hosting a backyard gathering or enjoying a simple weeknight dinner, this easy recipe is sure to become a favorite.

Caribbean Jerk Chicken Breasts

Serves: 6

Ingredients

  • 1 envelope Italian dressing mix
  • 2 Tbsp. brown sugar
  • 2 Tbsp. oil
  • 2 Tbsp. soy sauce
  • 1 tsp. ground cinnamon
  • 1 tsp. ground thyme
  • ½ tsp. ground red pepper
  • 6 small boneless skinless chicken breast halves (about 1-½ lb.)
  • 4 cups hot cooked brown rice

Directions

  1. Mix all ingredients except chicken and rice in shallow dish until well blended. Add chicken; turn to evenly coat both sides of each breast. Refrigerate at least 1 hour.
  2. Heat greased grill to medium-high heat. Grill chicken 30 minutes or until done (165 degrees Fahrenheit), turning occasionally.
  3. Cook rice according to directions as chicken cooks. Serve with rice.

Note: To prevent chicken from sticking to the grill, brush with oil.
