Dark Chocolate Pumpkin Truffle

Ingredients
- 7 tablespoons pumpkin puree
- 1 tablespoon sifted flour
- 2 tablespoons butter
- 4 pitted dates, chopped
- ¾ teaspoon vanilla extract, divided
- ¾ cup dark chocolate chips
- 2 tablespoons finely shredded coconut
- Pinch of pumpkin pie spice
- Pinch of cinnamon
- Pinch of sea salt
Directions
- Combine pumpkin puree, flour, butter, chopped dates, ¼ teaspoon vanilla extract, pumpkin spice and cinnamon in a food processor. Blend until smooth, then transfer to a mixing bowl.
- Place chocolate chips, remaining vanilla extract, and sea salt in a small saucepan on medium/low, stirring frequently until melted.
- In a mixing bowl, combine chocolate and pumpkin mixture and stir until well mixed. Place bowl in the fridge for approximately 30 minutes to firm up.
- Place shredded coconut into a small bowl. Form 1-inch balls from the pumpkin mixture and roll in the shredded coconut.
- Place truffles in a single layer in a covered dish and refrigerate overnight.
