Recipe: Herb-Rich Turkey Tenderloin

Looking for a smaller, hassle-free alternative to roasting a whole turkey? Herb-Rich Turkey Tenderloin is the perfect substitute for your holiday meal. Delicious tender turkey is marinated in a rich herb blend. It bakes in under 30 minutes and makes the house smell delicious.

Herb-Rich Turkey Tenderloin

Serves: 2

Ingredients

  • 1 (12 ounce) turkey breast tenderloin
  • 1 cup dry white wine (can substitute apple juice or chicken broth)
  • 3 green onions, chopped
  • 3 tablespoons fresh parsley, minced
  • 6 teaspoons extra virgin olive oil
  • 1 tablespoon garlic, finely chopped
  • 1 teaspoon dried rosemary, crushed
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper, ground
  • 1 teaspoon salt (divided)
  • 4 teaspoons cornstarch
  • 1 cup chicken broth

Directions

  1. Pat tenderloin dry and flatten to ¾-inch thickness.
  2. In a small bowl combine the wine, onions, parsley, 4 teaspoons oil, garlic, rosemary and thyme to make marinade.
  3. Pour a half-cup of the marinade into a large resealable plastic bag; add turkey. Seal bag and turn to coat; refrigerate for at least 4 hours, turning occasionally. Cover and refrigerate remaining marinade to make the sauce.
  4. Remove turkey from the bag and discard marinade. Sprinkle turkey with pepper and ½ teaspoon salt.
  5. Bake for 20-25 minutes, or until turkey reaches 165 degrees internally at its thickest point. Remove from oven and keep warm.
  6. In a small bowl combine the cornstarch, broth, reserved marinade and remaining salt until smooth; pour into skillet. Bring to a boil; cook and stir for 1-2 minutes or until thickened.
  7. Slice turkey and serve with sauce.
