Recipe: Tropical Overnight Oats

This flavorful recipe stars oats, a great source of heart-healthy soluble fiber that are rich in antioxidants. Soluble fiber helps good bacteria in our digestive tract.

Tropical Overnight Oats

Serves: 1

Ingredients

  • ½ cup rolled oats
  • ¾ cup unsweetened coconut milk
  • ¼ cup diced pineapple
  • 1 tablespoons chopped, unsweetened dried mango
  • 1½ teaspoon chia seeds
  • 1½ teaspoon unsweetened shredded coconut

Directions

  1. Combine oats, coconut milk, pineapple, mango and chia seeds in a small bowl or jar. Cover and refrigerate overnight.
  2. Top with coconut before serving.
