Recipe: Zucchini and Chicken Skewers

Try this easy recipe for the grill a great weeknight meal. The chicken and zucchini pack plenty of good-for-you nutrients making them delicious and healthy.

Zucchini and Chicken Skewers

Serves: 4

Ingredients

  • 3 tablespoons balsamic vinegar
  • 2 garlic gloves, minced
  • 2 sprigs rosemary
  • 2/3 cup extra virgin olive oil
  • 2-3 zucchini, washed

Instructions

  1. Cut zucchini into bite-sized chunks or spears and place into a deep pan.
  2. Chop the chicken breast into 1-inch pieces and place in a small deep dish pan or shallow bowl.
  3. Whisk balsamic vinegar, olive oil and minced garlic in a small bowl. Put half on the zucchini and half on the chicken. Add sprigs of rosemary and set aside for 30 minutes or up to 12 hours.
  4. Preheat your grill to 400 degrees F.
  5. Place chicken and zucchini pieces in alternating pattern onto skewers. Add skewers to grill and cook for about 10 minutes, flipping them half-way.
