Recipe: Zucchini and Chicken Skewers
Try this easy recipe for the grill a great weeknight meal. The chicken and zucchini pack plenty of good-for-you nutrients making them delicious and healthy.
Zucchini and Chicken Skewers
Serves: 4
Ingredients
- 3 tablespoons balsamic vinegar
- 2 garlic gloves, minced
- 2 sprigs rosemary
- 2/3 cup extra virgin olive oil
- 2-3 zucchini, washed
Instructions
- Cut zucchini into bite-sized chunks or spears and place into a deep pan.
- Chop the chicken breast into 1-inch pieces and place in a small deep dish pan or shallow bowl.
- Whisk balsamic vinegar, olive oil and minced garlic in a small bowl. Put half on the zucchini and half on the chicken. Add sprigs of rosemary and set aside for 30 minutes or up to 12 hours.
- Preheat your grill to 400 degrees F.
- Place chicken and zucchini pieces in alternating pattern onto skewers. Add skewers to grill and cook for about 10 minutes, flipping them half-way.
