#TryItTuesday: Summer Snacking on the Go

Memorial Day has come and gone ... and now the summer fun has begun!

Like many, summer is definitely our season of "go." Being on the go and then adding the yummy treats of summer can make eating healthy a challenge.

Today, I’m going to share a few of our favorite healthy summer snacks on the go.

Simple Summer Time Saver: Snack Stations

A simple time saver we call “snack stations” has helped us stay on track with the crazy go-go-go nature of summer. This time-saver is great if you have little ones at home, and it's just as great for us empty-nesters.

In our home, we have three designated snack stations: our cupboard, refrigerator and freezer. Once a week, typically on Sunday, we’ll fill up our snack stations, so we are prepared for the busy work week.

We either purchase individual packages of these items, or if we purchase a multi-serving package, we’ll portion out and place in baggies or to-go containers.

Pantry Snack Station

  • Dried fruit
  • Dried jerky
  • Popcorn or pretzels
  • Whole grain crackers
  • Peanut butter and crackers packages
  • Nuts and seeds
  • Granola or trail mix
  • Snack bars
  • Applesauce
  • Fruit bowl with apples and bananas
  • 100 percent fruit juice boxes

Refrigerator Snack Station

  • Cut up veggies, portioned in individual baggies: carrots, celery, cucumber, radishes
  • Grape tomatoes
  • Hard-boiled eggs
  • Cheese sticks
  • Yogurt
  • Hummus or guacamole
  • Berries, cherries, melons
  • Olives
  • Deli meat slices
  • Water bottles

Freezer Snack Station

  • Frozen fruit
  • Watermelon sorbet
  • Smoothies
  • Frozen fruit such as berries and grapes
  • Frozen Greek yogurt bars
  • Whole fruit popsicles

A Few of Our Favorites

For both the watermelon sorbet and smoothie, we make a larger batch and then portion out in to-go cups (that have lids) or small jars. Place in freezer to be enjoyed at a later time.

Watermelon Sorbet

Ingredients

  • ½ cup cold water
  • 5 cups seedless watermelon, cut into chunks and then frozen
  • 1¼ cup frozen raspberries or strawberries
  • ½ cup sugar
  • 2 tablespoons lemon juice

Directions 

  1. Place all ingredients in a blender or food processor.
  2. Blend until smooth. Enjoy immediately or place in a plastic container and freeze until you are ready to enjoy. We put ours in individual to-go cups.

Berry Delicious Smoothie

Ingredients

  • 1 cup berries (mixed, blueberries, strawberries, raspberries), fresh or frozen
  • ½ cup frozen cherries
  • ½ to 1 banana
  • ½ cup Greek yogurt
  • ½ cup spinach (fresh or frozen)
  • A few tablespoons of liquid, such as almond milk, fruit juice or water

Directions 

  1. Place all ingredients in a blender or food processor.
  2. Blend until smooth. Enjoy immediately or place in a plastic container and freeze until you are ready to enjoy. We put ours in individual to-go cups. 

Simple and Easy Trail Mixes

Choco-Cherry

Mix dried cherries, dark chocolate chunks or chips, white chocolate chunks or chips and almonds.

Pantry Delight

Mix granola, cereal (flake, Cheerios), raisins and M&M’s

Coconut Blend

Mix coconut flakes, dried fruit, dark chocolate chunks or chips, and almonds.
